It’s spring, which means bathing suit season is just around the corner. If you are looking to cut calories, eat healthy, and save money but not skimp on flavor this cauliflower Reuben sandwich is perfect to add to your weekly, spring menu. A healthy take on a traditional Reuben sandwich and under 200 calories. It’s easy enough for anyone to prepare and so flavorful that it will become one of your favorites.

Cauliflower Reuben Sandwich
Recipe serves six.
Ingredients
1 box of Trader Joe’s Frozen Cauliflower Patties
6T Trader Joe’s Jalapeno Sauce
1C Trader Joe’s Shredded Almond Mozzarella Cheese
8T Trader Joe’s Pickled Sauerkraut
6oz. package of peppered turkey breast, cut into chunks
Step 1: Spray a large frying pan with an olive oil spray and set your stove top to medium/high. Place the defrosted cauliflower patties in the frying pan. Brown lightly. Flip the patties over to brown the second side.
Step 2: Place the peppered turkey breast on top of the browned cauliflower patties.
Step 3: Evenly distribute the sauerkraut on top of the turkey breast.
Step 4: Evenly distribute the jalapeno sauce on top of the sauerkraut.
Step 5: Top each sandwich with the shredded cheese, cover the pan until all of the cheese melts and the sandwiches are heated through.
